Vegan Matcha Avocado Ice Cream

During the hot summer, an easy to make ice cream recipes are great to keep you cool. This one is dedicated especially for avocado lovers. It doesn't require an ice cream maker and includes only a small amount of ingredients.



Ingredients:

  • 3 ripe avocados pitted and sliced
  • 3/4 cup coconut milk
  • 1/4 cup agave or maple syrup
  • 1 tablespoon lime juice
  • 1 tablespoon matcha powder
  • 1 tablespoon vanilla extract
  • ½ teaspoon sea salt
  • Chopped pistachios, cacao nibs, and mint leaves, for serving optional

Instructions:

  1. Place all of the ingredients into a food processor fitted with an s-blade. Process until smooth, stopping to scrape down the sized, if necessary. It may take a few minutes.
  2. Pour the mixture into a freezer-safe container and freeze until solid. Every freezer is different, but it should take 3-4 hours.
  3. Serve cold topped with chopped pistachios, cacao nibs, and mint leaves, if using.
  4. Store any unused ice cream in an air-tight container in the freezer.
