This special smoothie will give you bursts of vibrant, fresh feelings on insanely hot summer days.
Ingredients:
- 1 dragon fruit
- 1 mango
- 1 6 oz. container red raspberries, washed
- 12 oz Simply Lemonade with Blueberry
- 2 cups of ice
- Coconut milk
Instructions:
- Cut the dragon fruit in half, lengthwise. You can either peel the outer pink skin away or scoop it out with a spoon. Reserve a few slivers and cut them up into little cubes, set these aside for now. Add raspberries to a fine mesh strainer, using the back of a spoon press down on to the raspberries, catching the raspberry sauce in a bowl underneath {this takes a few minutes}. Cut up the mango*.
- To your blender add the blueberry lemonade, dragon fruit, mango, 3/4 of the raspberry sauce and ice. Blend until mixed. Grab a glass and pour some of the raspberry sauce in the bottom, move the glass in a swirling motion to coat the edges of the glass. Pour the smoothie into your glass and top it with the cubes of dragon fruit.
- For a more tropical vibe, splash in some coconut milk! This reminds me of a drink I would get straight out of the Hawaiian Islands on vacation. Try it both ways!
